It acts as an emulsifying and binding agent, which adds volume, elasticity, and structure to various baked goods such as bread, cookies, and cakes. These unique characteristics make Xanthan Gum a great replacement for gluten for creating gluten-free and keto-friendly recipes. For baking, use 1/2 to 3/4 tsp of xanthan gum per cup of Gluten-Free flour.
